For me, this year, it’s Opera Cake: a French classic that combines the magic of coffee, almond sponge, and chocolate into an elegant masterpiece. It’s like biting into a symphony of flavors, each layer playing its role to perfection.

Now, don’t let the name or its sophisticated look scare you away. Opera Cake is surprisingly achievable. It’s a dessert that rewards patience and precision—much like putting up those Christmas lights one bulb at a time. It’s also one of those projects that’ll make you feel like a professional pastry chef as you step back and admire the layers you’ve built.

Opera Cake (or Gâteau Opéra) has been dazzling French patisserie lovers since the 20th century. Its beautiful layers resemble the tiers of an opera house, while its flavors—coffee-soaked almond sponge, rich coffee buttercream, and silky chocolate ganache—sing like a harmonious Christmas choir.

For our holiday version, I’ve slightly adjusted the quantities to make it perfect for 6 servings (trust me, you’ll want every last bite!). It’s still every bit as decadent but just the right size for an intimate Christmas dinner or cozy gathering with family.

  2. Coffee French Buttercream: Creamy, velvety, and infused with espresso—this buttercream is the heart of the cake.
  3. Chocolate Ganache: Rich bittersweet chocolate brings a bold, luxurious finish to balance the sweetness.
  4. Chocolate Glaze: A glossy, picture-perfect finish that gives your cake that signature French pâtisserie shine.

🎅 Christmas Opera Cake’s Ingredients for 6 Servings

Joconde Sponge

  • Cooking spray
  • 3 large egg whites
  • 2 tbsp granulated sugar, divided
  • 2 large eggs
  • 3/4 cup (90 g) confectioners’ sugar
  • 3/4 cup (70 g) almond flour
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter, melted and cooled

Coffee French Buttercream

  • 1 tbsp instant espresso powder
  • 2 large egg yolks
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (1 stick) unsalted butter, room temperature, cut into pieces

Espresso Soak

  • 3 tbsp granulated sugar
  • 1 1/2 tsp instant espresso powder

Ganache

  • 2 oz bittersweet chocolate (60% cacao), finely chopped
  • 1/4 cup heavy cream

Glaze

  • 2 oz bittersweet chocolate (60% cacao), finely chopped
  • 1/4 cup heavy cream
  • 1 tsp corn syrup (for shine)

🎁 How to Make This Christmas Opera Cake

Step 1: The Joconde Sponge

  1. Preheat your oven to 350°F (175°C) and grease a 10″x6″ baking sheet. Line with parchment paper.
  2. In a stand mixer, beat the egg whites on medium speed until foamy. Slowly add 1 tbsp of sugar and beat until soft peaks form. Transfer to a separate bowl.
  3. In the same mixer (no need to clean!), beat the eggs, confectioners’ sugar, and almond flour until pale and fluffy, about 5-6 minutes. Gently fold in the flour, melted butter, and egg whites until no streaks remain.
  4. Pour the batter onto your prepared pan and smooth the top. Bake for 12-15 minutes or until the cake is springy and pulls away from the edges. Let cool.

Step 2: The Espresso Soak

  1. In a small saucepan, combine sugar, espresso powder, and 3 tbsp water over low heat until dissolved. Let cool.

Step 3: The Coffee French Buttercream

  1. Dissolve the espresso powder in 1 tbsp hot water.
  2. In a stand mixer, beat egg yolks until pale. Meanwhile, heat sugar and 2 tbsp water in a pot until the syrup reaches 240°F (use a thermometer to avoid stress!).
  3. With the mixer running on low, slowly stream the hot syrup into the egg yolks. Beat on high until the mixture cools to room temperature.
  4. Add the butter, one piece at a time, mixing until smooth. Beat in the espresso mixture.

Step 4: The Ganache

  1. Place chocolate in a bowl. Heat the cream in a saucepan until just simmering. Pour over chocolate and let sit for 2 minutes, then stir until smooth. Let cool to a spreadable consistency.

Step 5: Assembly

  1. Trim your cooled cake into 3 equal rectangles. Place one piece on a wire rack set over a tray. Brush with espresso soak.
  2. Spread half the buttercream evenly over the first layer. Top with the second sponge, brush with soak, and spread the ganache evenly over the top.
  3. Add the final sponge layer, brush with soak, and spread the remaining buttercream. Smooth the top and refrigerate for at least 1 hour.

Step 6: The Glaze

  1. Heat the cream and corn syrup until just simmering, then pour over the chopped chocolate. Stir until smooth and glossy.
  2. Pour the glaze over the chilled cake, smoothing quickly with an offset spatula. Refrigerate until set.

Trim the edges to reveal the gorgeous layers, and let your Opera Cake sit at room temperature for 10-15 minutes before serving. Garnish with gold leaf, a dusting of cocoa powder, or even a few sugared cranberries for extra Christmas magic.
